Menu Plan Monday – 6/28

Here is our plan for this week.

  • Greek Turkey Burgers, Grilled Veggies (recipe thanks to Sharon on the LRWC Facebook page)
  • Grilled Chicken, Macaroni Salad, Tossed Salad
  • Breaded Tilapia, Rice Pilaf, Veggies
  • Grilled Chicken Sausage with sautéed onions & tomatoes over Rice
  • Pizza on the Grill – last time we messed this up.  Any suggestions would be greatly appreciated 🙂
  • Eat out
  • Barbecue – Happy 4th!

    -Grilled Hawaiian Chicken, Pearled Roasted Garlic Couscous, Squash (from farmers’ mkt, haven’t decided how to fix it yet)
    -Herbed Pork Loin Chops, Steamed Veggies, Rolls
    -Grilled Flat Iron Steak, Lemon Herb “Smashed” New Potatoes, Sauteed Greens
    -Grilled Hot Dogs, Chips (per request… not my fav meal, lol)
    Traveling over the weekend, so combo of eating out and whatever our hosts supply, lol

    We grill pizza pretty regularly and it usually turns out great. My tips – use a dough that can hold it’s shape. My recipe has olive oil and a bit of honey in it, and since I’ve switched from my old recipe, I’ve never had a problem grilling it. I think my old recipe was too ‘wimpy’ and fell through the grates. Make sure the grill is HOT and spray the dough with some olive oil. I cook it until it’s half – 2/3 done and then we add toppings and finish in the oven. You can finish it on the grill, but with three boys we need to use the oven because we make so many.

    Be sure to oil your pizza dough before putting it on a hot grill. Grill one side until it looks done, then flip it over & top with your sauce, cheese, meat, etc. Be sure to use small pieces of dough to make personal pizzas. Depending on how hot the grill is, sometimes we put the pizzas on the top rack, away from the heat a little, to cook the second side so it doesn’t burn, or once the dough is all cooked, we put them on the top rack to melt the cheese a little more. We love grilled pizza- one of our favorite summer dinners, although it is very time intensive to make!
