Menu Plan Monday – 7/5

Here is our plan for this week.  You’ll notice we’ll be eating a lot of fish this week.  It seems we lightened up on that a bit since daughter #2 has been home from college and does not like fish.  So, I haven’t made it that often and I’ve got a lot in the freezer that I need to start using up since it’s been in there a while.  So, she’ll have to adjust and go with the flow.  We have a  saying in this house, “This is not a restaurant, I am not a chef, you eat what is on the table”.  So, with that said, here is our plan for the week.

  • London Broil on the grill, Pasta Salad, Broccoli
  • Panko Breaded Tilapia, Rice Pilaf, Salad
  • Grilled Salmon, Wacky Mac Pasta Salad
  • Pasta, Salad, Texas Toast
  • Grilled Tilapia, Rice, Broccoli
  • Grilled Chicken Sausage over Rice with Sautéed Onions
  • Eat Out!

    Do you have a recipe for the Grilled Chicken Sausage over Rice with Sautéed Onions ? Thanks!

      @Pat C, It’s simple, simple, simple cause that is how I roll :).

      Cook the sausage on the bbq. Sauté sliced onions & peppers in a fry pan with butter. Slice up the sausage and toss into the onions & peppers. Serve over rice.

    Here is one of our favorite summer time recipes – when the tomatoes and zucchini are in season! We like to serve it with corn on the cob and grilled zucchini or eggplant!

    Garden Bake

    1 cup chopped zucchini
    1 cup chopped tomato
    1/8 cup chopped onion
    1/4 cup grated parmesan cheese
    1/4 cup grated cheddar cheese
    1 1/2 cups milk
    3 eggs
    3/4 cup Bisquick
    1/2 tsp salt
    1/4 tsp pepper

    Preheat oven to 400. Grease deep pie plate with butter. Add tomatoe, zucchini, onion and cheeses to plate. Beat together remaining ingredients and pour over veggies. Bake for 35-40 minutes, or until a knife inserted in center comes out clean.
