Menu Plan Monday – Reader Recipe Week!

Last week I just didn’t feel like planning a menu so I reached out for help.  And, you guys came through for me.  What great recipes and ideas.  I used some of them last week and I’m still going back to pick more.  So, here is this week’s plan.  You can find all the recipes in the comments on last week’s post.

      – chicken fricase w/ white rice and split pea stew
      (by the way,my fam eats alot of beans! were cuban and a bag of beans for a dollar can last me two weeks!)
      -pork chops and fettuccini alfredo (we always find a good deal on bone in pork chops, and the bone always adds flavor!)
      -pot roast and potatoes w/ veggies(i buy a a medium potroast when it is onsale and divide into two or even three pieces, and freeze them individually so im always ready to go!)
      – shrimp and chicken risotto
      sounds fancy but its really not! we always have bags of shrimp in the freezer(look out for sales and stock up!)i toss some butter and grated parmesan with cooked risotto and then sear chicken and shrimp in bacon drippings really good must try!
      -breakfast for dinner! pancakes and bacon, toast ,fruit! great fun way to kick off the weekend!
      saturday and sunday i take it easy hot dogs and pasta salad, and were eating out on sunday! we always try to have early dinners as restaurants always have lunch specials usually good until 4 pm and as we have a two year old we like to frequent restaurants where the kids eat free!

      Tuesday- Fried Bologna sandwiches with baked beans and mac and cheese
      Wednesday- Breakfast for dinner eggs and bacon toast
      Thursday-Empanadas
      Friday- Cereal (hubby and stepdaughter get home late friday nights)
      Sat-Pizza
      Sun-no plans yet

      Can you give me the recipe for swedish meatballs please? That sounds great and I think it’s something my kids would love!

      Cindy – Did you make the chicken scampi? I’m thinking of making it but wanted to get some feedback. Sounds yummy!

        Oh yes, it was so yummy. And I was so excited about leftovers but my daughter took it back to school with her. Making it again soon.

          Thanks for the reply and for posting the recipe in the first place. Made it for dinner tonight. It WAS yummy. I have leftovers! 🙂 I’ll definitely be making this again.
