Kellogg’s Corn Flakes Cereal is free or cheap this week and next at lots of stores including: Stop & Shop, Giant & More.

And, here is your Living Rich Recipe of the week:

Crispy Corn Flakes Chicken

Here is a recipe that has been around for a long time. But, it’s simply and delicious. And, what better way to use that free box of Kellogg’s Corn Flakes you picked up

Crispy Corn Flakes Chicken

Ingredients

2 lbs Boneless Chicken Breast (thin sliced)
3 eggs
1/4 cup of milk
salt and pepper
6 cups Kellogg's Corn Flakes

Directions

Pre-heat your oven to 350 degrees F.
Pour Corn Flakes into a small bowl and crush into small crumbs with a spoon or with your hands
In a seperate small bowl add eggs and milk and whisk
Sprinkle a little bit of salt and pepper on each piece of chicken and also in the Corn Flakes crumbs
Cover a sheet pan with foil
Dip each piece of chicken in egg/milk mixture and then in Corn Flakes crumbs pressing firmly to coat the chicken well
Place the chicken on the foiled sheet pan and place in oven
Cook for about 25 minutes or until inside is no longer pink and outside is nice and crispy
Serve and enjoy with a salad or other veggies of your choice!

I’ve made this once before and its very good…but you can also lighten up the recipe, instead of using eggs, use egg whites or egg beaters, and instead of milk or skim milk, use Almond Breeze Unsweetned Vanilla Milk.

some great variations to this would be, garlic and onion powder, using buttermilk instead of milk.. adding a tiny bit of parmeasan cheese in with the cornflake crumbs..
