Reader OmgItsJuiceLee has a question about what to do with all of her peanut butter.
Question:
So between the Skippy deal a few wks back and now the Peter Pan deal this week, I have a TON of peanut butter. My baby isn’t a fan of PB&J, my husband certainly won’t take it to work, and my older step-son (the only one who really eats PB&J) is only here on weekends during the school year. What do I do? I was thinking I could make some cookies with it. Do u know of a good recipe?
Any tips for OmgItsJuiceLee? How are you going to use your stockpiled peanut butter?

I have a ton of peanut butter myself and I recently watched an episode of Barefoot Contessa on foodnetwork. She had a recipe for peanut butter and jelly bars. It uses a entire jar of peanut butter. I just made it 2 days ago and it came out pretty good. You can search for the recipe on foodnetwork’s website. The recipe is pretty simple and doesnt require much work. If have trouble finding the recipe, let me know and I can try to get it to you.
Go to recipe.com and do a search for peanut butter. They have a lot of recipes for peanut butter. My fave is peanut butter cookies.
You could always donate! Either your local food pantry, a friend in need, or even sending some to a company that sends supplies overseas to our troops. I already had a stock of peanut butter for my family, but took advantage of the same deals you did for the sole purpose of donating it. It feels SO good to give back:)
I just made peanut butter cupcakes last night came out delicious! this is the recipe i used. And it used up a half of jar of PB.

There are lots of recipes out there for PB cookies. I made one using a box of cake mix and almost a full jar of PB. Sorry I can’t remember where I got it though. =/
http://allrecipes.com/Recipe/Gluten-free-Peanut-Butter-Cookies/Detail.aspx I like ones like this because it uses 2 cups of peanut better, so it uses up a lot! They are delicious and you don’t miss the flour!! I don’t cook them because I need to, just because they are good!
Also try some savory dishes and make a thai peanut sauce.

Those are THE BEST!
If you are thinking cookies:
Try peanut butter and jelly thumbprints
Peanut butter cookies with chocolate kisses or peanut butter cups
1 cup peanut butter
1 cup brown sugar
1 cup chocolate chips
1 egg
Mix together. Scoop out onto cookie sheet. Press with fork. Bake at 350 for around 8 minutes (depending on your oven). Delicious!!
I made these cookies a couple night’s ago and they were great!

I like to use allrecipes.com when searching for something to make with a specific ingredient. They have an Ingredient Search, where you add some of the ingredients you want to use (and some you don’t!) and it finds the perfect recipe for you. Great for when you don’t want to go out and buy a lot of expensive items the recipe calls for.
If you’re looking for some savory recipes (which I was doing for my near-expired jar of Skippy a few weeks ago!), try a Thai peanut sauce that you can put over veggies or pork:

Or, for something very different, a lot of dishes from West Africa incorporate peanuts into their soups and stews. Here’s a recipe for a spicy African Yam Soup with peanut butter:

Mix PB with Worcestershire sauce and brown sugar to make a nice sauce in which to cook pork chops!
This savory recipe only uses 1/2 cup peanut butter, but I enjoyed it and it’s easy. You could always double it. http://crockpot365.blogspot.com/2011/02/easy-peanut-butter-chicken-slow-cooker.html.
I just thought the same thing and made rice crispy threats with peanut butter. Loved them like that.
Paula dean makes an awesome Monster Cookie recipe that uses almost a full jar of peanut butter. They’re delish! You can find it on the foodnetwork website.
My family absolutely loves this recipe for peanut butter cookies! Just like the name, they are irresistible! Chewy and gooey:). http://allrecipes.com/Recipe/jif-irresistible-peanut-butter-cookies/detail.aspx
What about Peanut butter pie? mixes PB with chocolate pudding and cool whip to make a really awesome dessert (tastes like a creamy reese’s cup!)
Snickers Brand Surprises
2 sticks butter (softened)
1 cup creamy peanut butter
1 cup light brown sugar
1 cup sugar
2 eggs
1 teaspoon vanilla

½ teaspoon salt
1 pkg (13 oz) Snickers brand miniatures
1 pkg (11 oz) Dove brand milk or dark chocolate gifts (optional)
1. Combine the butter, peanut butter, and sugars using a mixer on a medium to low speed until light and fluffy.
2. Slowly add eggs and vanilla until thoroughly combined. Then mix in flour, salt and baking soda.
3. Cover and chill dough for 2-3 hours.
4. Unwrap all Snickers brand miniatures.
5. Remove dough from refrigerator. Divide into 1 Tablespoon pieces and flatten.
6. Place a Snickers brand miniature in the center of each piece of dough.
7. Form the dough into a ball around each Snickers brand miniature.
8. Place on a greased cookie sheet and bake at 325 for 10-12 minutes. Baking time may need to be adjusted if using more than 1 Tablespoon of dough per cookie.
9. Let cookie cool on baking rack or wax paper. (Holiday Hint: Spruce up Santa’s surprise by drizzling melted Dove brand milk or dark chocolate gifts over the top of each cookie.)
Save it for Christmas and make peanut butter fudge for gifts!
Thanx Cindy and everyone for the suggestions
I made peanut butter cookies yesterday and they were yummy. I’m gna try one of the recipes here though because I felt they could have been better.
Quick question: Is the Thai PB sauce good on anything other than pork? My hubby was raised Muslim so he lives by “lips that touch swine will not touch mine” lol. No pork in this house… I’d kill for a porkchop right now
You can also make a satay with the Thai sauce. Skewer chicken chunks and grill add sauce at the end and serve over fried rice sticks
mix peanutbutter with vanilla frosting (store bought or make your own) makes a yummy peanut butter frosting for choc cupcakes- cake or warm it in the micro and pour it over chock bundt cake then sprinkle with mini choc chips… HUGE HIT!!! sooo delicious!! enjoy…
I make peanut butter-banana smoothies. I use a dairy free alternative to milk (almond, coconut, soy really whatever is in the house!) And add in chia and hemp seeds for extra protein punch its great tasting and fill me up till lunch.
