10 Days of Green: Green Velvet Whoopie Pie

In my search for some awesome recipe and crafts ideas for the St. Patrick’s Day 10 Days of Green, I found these Green Velvet Whoopie Pies!

Green Red Velvet Cake Mix

Ingredients

2 1/2 cups all purpose flour

2 cups sugar

1 Tablespoon cocoa

1 teaspoon salt

1 teaspoon baking soda

2 eggs

1 cup oil

1 cup buttermilk

1 Tablespoon vinegar

1 teaspoon vanilla

1 oz green food coloring

Directions

Preheat Oven to 350 Degrees

Grease Whoopie Pie Pans

Stir Eggs in medium bowl with a wisk and add in remaining liquid ingredients

Wisk until blended then set aside

Place all Dry ingredients in your mixing bowl and stir together

Put food coloring into wet ingredients

Pour wet ingredients into dry ingredients and mix on medium high for about a minute until well combined

Pour batter into whoopie pie pans after adding 1/4 cup of flour to thicken them up

Cook for 10-15 minutes and then let cool

Cream Cheese Frosting Center

Ingredients

1 oz package of softened cream cheese
1/4 cup softened butter
1 teaspoon vanilla extract
1 bag powdered sugar (2 lb bag)
Milk as needed

Directions

Cream together Cream Cheese, Butter and Vanilla in a bowl until smooth
Gradually add in powdered sugar and continue mixing
add in milk as needed to get desired consistency
Put between Whoopie Pies and decorate!

Select All | Un-Select All

I’m boring. My big St. Patrick’s day treat is all the green hershey kisses and reese’s peanut butter cups I pulled out of the clearance christmas bags. We used the red ones for valentine’s day and the silver ones for new year’s eve and the super bowl. I would have saved them for next christmas but they of course exp’d in November.

lol…i do the samething..i also use the leftover green & red M&M’s. i separate them and use the red in v-day brownies & the green in magic bars or ontop of cupcakes..
