Mini Sausage Quiches Recipe
With Italian Sausage only $1.88 a lb this week at ShopRite, I thought it would be fun to find an out of the ordinary recipe. Of course I’ll be making sauce with meatballs and sausage but I found this recipe for Mini Sausage Quiche I thought I would try. I’m actually going to use Mozzarella Cheese instead of the Swiss and Ricotta instead of the Cottage Cheese (blah!) since I have so much in my freezer.
I bet these will freeze great for quick appetizers for Sunday Dinner!

These look delicious! Even though I’m in my 40′s, I am new to cooking properly. I can re-heat & microwave like a pro, but want to cook my daughter more whole foods. Cindy, I see you said that you have ricotta cheese in your freezer. I wasn’t aware that ricotta could be frozen, other hard cheeses I knew could be. If it is, can I divide it? Any suggestions as to what container the portions could be frozen in? Are freezer bags ok? Sorry to sound ignorant, but I would LOVE to have ricota in my freezer as a stockpile item.
