Thanksgiving Recipe: Turkey Casserole

Over the past week we’ve featured some unique Thanksgiving recipes including unique green been recipes, mashed potato recipes and more! Now that you guys probably have your menus prepped for Turkey Day, the last thing you want to think about is cooking on Friday, especially when you’ll be so busy with all your Black Friday shopping, which is why this Leftover Turkey Casserole is a perfect option if you’re looking for a quick and easy meal this coming weekend!

I’ve never tried a leftover casserole like this one but this might be the year I give it a try. I’m one of those who likes to have Thanksgiving Day meal all over again and don’t get too creative with my leftovers, but I’m always open to trying something new 🙂

Leftover Turkey Casserole Recipe:

Leftover Turkey Casserole Recipe

Ingredients:

2 tablespoons butter
1 onion, chopped
2 cups of leftover vegetables
2 cups of leftover stuffing
2 cups leftover turkey
1 can cream of mushroom soup or evaporated milk (optional)
2 cups leftover mashed potatoes
2 eggs
1 cup shredded cheddar cheese
cranberry sauce to garnish

Directions:

1. Preheat the oven to 350 degrees.

2. Melt the butter in a skillet over medium heat and saute the onion until soft and translucent, about 5 minutes. Stir in the remaining vegetables and the turkey. Mix together and remove from heat.

3. In a casserole dish (9×13-inch), spread the stuffing over the bottom. Add the turkey and vegetable mixture and spread evenly on top of the stuffing. If using, add the can of cream of mushroom soup or milk and spread on top of the meat and vegetable mixture. In a medium bowl, mix together the mashed potatoes and the eggs until thoroughly combined. Spread this on top of the turkey and vegetable mixture (or the cream of mushroom soup or milk, if you used it). Top with the shredded cheese.

3. Bake for 25 to 30 minutes. Let stand 5 to 10 minutes before serving. Add some leftover cranberry sauce to the top if desired.
