5 Meals for Under $30 at Target

What’s for dinner this week?  How many times a week do you ask yourself that question!  Check out our menu and recipes for this week.  We are basing our menu on the great deals that you can pick up this week at Target.  Everything can be purchased at Target and your cost will be less than $30!  Our recipes are geared for a family of four, unless otherwise noted. That’s and average of $6 per meal or $1.50 per serving.  How awesome is that!

You might find that you already have some of the items listed on the shopping list in your stock pile so your out of pocket cost will be even less!  Just so you know, some prices may vary at your local Target.

Ingredients you will need for this recipe:

  • Red or green sweet pepper (1/2)
  • Onion (1/2)
  • 1 fresh serrano pepper *
  • Vegetable Oil
  • Tortillas, 4
  • Monterey Jack cheese (2 ounces)
  • Tomatoes, 2
  • Cilantro
  • Sour Cream (optional)
  • Cilantro and lime wedges (optional)

* Since fresh serrano peppers are difficult to find, we have substituted a jalapeno pepper instead.

Chicken Over Black Beans and Rice
with Sliced Tomatoes and Carrots
Total Cost: approximately $5.83

Ingredients you will need for this recipe:

  • (2) Chicken breasts – approximately 1/2 to 3/4 lb.
  • White Rice
  • Salsa
  • Black Beans
  • Shredded Cheddar cheese
  • Cilantro (optional)
  • Sour Cream (optional)

If you prefer not to include the optional ingredients, your cost for this meal will be less. We’ve added them into our list.

with Frozen Vegetable
Total Cost: approximately $7.65   *Serves 6*

Ingredients you will need for this recipe:

  • Penne Pasta
  • Diced tomatoes
  • Kidney Beans, 2 cans
  • Spaghetti Sauce
  • Shredded Mozzarella cheese

Tilapia Foil Packets on the Grill
with Rice and Frozen Vegetables
Total Cost: approximately $6.81

Ingredients you will need for this recipe:

  • Tilapia – 1 lb.
  • Plum Tomatoes
  • Garlic
  • Onions
  • Thyme

The recipe calls for a shallot, but we are recommending an onion instead.  Also if you would like to make this meal less expensive you can substitute Swai for the Tilapia.

Chicken Fettuccine
Total Cost: approximately $4.63

Ingredients you will need for this recipe:

  • Chicken breasts – 8 ounces
  • Fettuccine
  • Tomatoes
  • Zucchini
  • Olive Oil
  • Parmesan Cheese

This recipe calls for sun dried tomatoes, we are using fresh tomatoes instead.  We also suggest using some olive oil to cook the zucchini and tomatoes.
