Spinach Pesto
Where to begin.. I bought the wrong variety of basil this year for my garden. I gave it a chance, but never again, it was a mistake. I have these little mini plants with tiny leaves, smells like basil, taste likes basil but my yield for 8 plants is close to zip compared to years in the past. Every year I grow basil in my garden. I freeze a bunch to use it throughout the winter, make pesto sauce – and freeze batches of that. You name it. I hate paying supermarket prices for something I can grow myself. And then there was this year.. oh well, next year will be different! 🙂
Anyway, the recipe I am sharing today is a great variation of the traditional pesto sauce. It uses a lot of spinach, not as much basil as the normal pesto sauce so this recipe is great for my mini-crop! This recipe doesn’t have pine nuts or walnuts. All the ingredients go in the food processor, pretty easy for a delicious recipe.
You can use this pesto sauce on pasta, fish, chicken, bread, etc. I have been making this recipe for many years. I think its great. Give it a try and see what you think.

Spinach Pesto
Ingredients:
- 3 cups fresh packed spinach
- 2/3 cup olive oil
- 1/2 cup fresh basil leaves
- 4 garlic cloves (add more or less depending on your taste)
- 1/2 cup Parmesan cheese
- salt & pepper to taste
Directions:
1. Combine all ingredients in blender or food processor until fully blended and desired consistency.
Serve on pasta, vegetables, bread, fish. Serve with additional cheese if desired.
