Easy Turkey Meatballs

This recipe is quite simple to make.  It all goes together quickly.  You can use the meatballs on sandwiches or have them for dinner.  I’m giving you a simple recipe for a sauce for these meatballs.  These are not Italian meatballs, but if you wanted to put them in with some pasta sauce they would be good like that also (add a little garlic, parsley and grated cheese if you want to add them to a tomato sauce).

This recipe calls for onion soup mix.  If you prefer to stay away from the mix, just add some chopped onion, salt and pepper instead.  Very simple.  If you make the sauce recipe I am including, I suggest you brown the meatballs in a skillet.  If you like to have your sauce a little creamer, add a little sour cream at the end.  You can also bake the meatballs in a 400 degree oven until they are done and then use them any way you would like.

I’ve made this recipe many times and we’ve always liked it.  I’ve served it with the sauce over rice or noodles.  I especially enjoy the leftover meatballs for lunch.  🙂

Easy Turkey Meatballs

Ingredients:

  • 1 lb. ground turkey
  • 3/4 cup soft bread crumbs
  • 1 egg
  • 1 envelope of onion soup mix (divided)*
  • 1 – 2 tablespoons olive oil or canola oil
  • 2 1/2 cups water
  • 1/2 cup milk
  • 3 tablespoons flour
  • 1/4 cup sour cream – optional

*  you can substitute 1 small onion finely chopped, 1/4 teaspoon black pepper and salt to taste instead of the onion soup mix

Directions:

1.  Combine bread crumbs, half of the soup mix (or chopped onions), egg and turkey, mix well.  Shape into approximately 1 inch balls.

2. Heat oil in skillet and in batches, brown meatballs.  Once browned, return all the meatballs to the skillet and add 2 1/2 cups water along with remaining soup mix.  Bring to a boil, reduce heat, cover and let simmer for 10 mins. or until all juices are clear.

3. Combine flour and milk, mix well and add to skillet.  Bring to a boil, still until thickened.  Add in sour cream (if using), remove from heat and serve over rice or noodles.

Makes 4 servings.
