Baked Barbecue Ribs Recipe

I don’t know about you guys, but I don’t like to grill in the winter.  Its just too cold and by the time I am ready to make dinner its dark outside.  A few weeks ago, I visited a home show and listened to a lecture on barbecuing.  I found it very interesting and yummy… we even had samples to taste. 🙂

Usually when I make ribs, I cook them in my slow cooker and then put them on the grill.  Its fine, tastes good but for this time of year, it brings us back to grilling in the colder months.  For a rib-fix this time of year, I make my ribs in the oven.  Use a dry rub and let the ribs sit in the refrigerator overnight.  The next day, you’ll bake them for about 2 – 3 hours.  During the last half hour, you can slather the ribs with bbq sauce.  Use your favorite bottled sauce or the recipe I am including below.  Once they are done, you can put the ribs under the broiler for a little extra color if you’d like.

A few tips that I learned at the home show is not to pierce or prick your meat when it is marinating or cooking.  Also ribs should not be cooked to fall of the bone.  Have to say I am very guilty of that happening with my slow cooker ribs.  I learned some techniques on how to smoke ribs without a smoker, but haven’t tried that one out yet.  But if I can perfect a recipe with that, I will let you know!

Baked Barbecue Ribs

Ingredients:

  • 1 rack of ribs – about 3 – 4 lbs.

rub:

  • 2 tablespoons brown sugar
  • 1 tablespoon paprika – smoked or regular
  • 1 tablespoon dry mustard
  • 1 tablespoon chili powder
  • 2 teaspoons onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon cayenne pepper (optional)

bbq sauce:

  • 1 cup ketchup
  • 1 tablespoon chili powder
  • 3 tablespoons honey
  • 2 teaspoons minced garlic
  • 1 tablespoon apple cider or malt vinegar
  • 1 teaspoon ginger or 1 tablespoon finely grated fresh ginger
  • 1/2 lemon

Directions:

1. The day before:  Mix all dry rub ingredients together in small bowl. Rub all over rubs. Wrap ribs in plastic wrap or aluminum foil. Place in refrigerator until ready to bake.

2. Cooking day:  Remove ribs from refrigerator and wrapping.  Preheat oven to 325°.  Put ribs, meaty side up, in shallow baking pan (for an easier clean up – line pan with foil).  Bake 1 1/2 hours.

3.  While ribs are baking, combine ketchup, chili powder, honey, garlic, vinegar and ginger in sauce pan. Bring to boil. Squeeze lemon into sauce then cut rind into quarters and add to sauce.  Bring to boil, let cook for 2 -3 mins.  Remove from heat.

4.  After 1 1/2 hrs, remove ribs from oven.  Pour off fat.  Brush top half of ribs with sauce. Return ribs oven and bake 15 minutes – basting occasionally.  Turn ribs over, baste and cook 15 more minutes.  Put ribs under broiler for color, if desired.
