Strawberry Pie Recipe

Maybe the cold winters make me appreciate the spring a lot more.  I just love this time of year, being able to go outside without shivering and being able to buy all of the berries that come out this time of year.  I have been enjoying the strawberries in particular lately.

We’ve posted some recipes here on LRWC throughout the years using strawberries.  I have another recipe for you today, but don’t forget to check out our other strawberry recipes along with Cindy’s post on how to freeze strawberries:

Last weekend, I bought 4 containers of strawberries.  They were a great price and looked wonderful.  I planned to make Strawberry Rhubarb Crisp but wouldn’t you know, I couldn’t find any rhubarb.  So I used Cindy’s tips on How to Freeze Strawberries and ate a bunch.. and probably a few more.  😉

Then I remembered my strawberry pie recipe.  Its all strawberries 🙂   You can use any type of crust for this pie, but I am using a nut crust with this recipe, which is really simple to make if you have a food processor or nut grinder. You can use any kind of nuts, making it with one single type or a combination of walnuts, almonds, pecans, macadamia or brazil nuts.

 

Strawberry Pie Recipe

Nut Crust:

Ingredients:

  • 1 1/2 cups finely ground nuts (either walnuts, almonds, pecans, macadamia or Brazil nuts or combination)
  • 3 tablespoons sugar
  • 2 tablespoons butter, softened

Directions:

1. Preheat oven to 400°.  In a small bowl mix finely ground nuts with sugar and butter.  With back of spoon press mixture into bottom and side of 9 inch pie plate (do not spread on rim).  Bake about 8 mins. until golden. Remove to wire rack to cool completely.

Pie:

Ingredients:

  • 8 cups strawberries (about 2 – 2.5 16 oz. containers)
  • 2/3 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 cup whipping cream
  • 2 tablespoons powdered sugar
  • 1/4 teaspoon almond extract

Directions:

1. Clean and remove stems of strawberries.  In blender or food processor purée one cup of strawberries and 2/3 cup water until smooth.  Add water to make one and a half cups of strawberry mixture.

2. In medium pan combine sugar and cornstarch, stir in berry mixture.  Cook and stir over medium heat until mixture is thickened and bubbly, reduce heat.  Cook and stir for 2 minutes more, remove from heat. Cool for 10 minutes without stirring.

3. Spread about 1/4 cup of the berry mixture over the prepared pie crust.  Arrange half of the remaining berries into the pie plate (stem in down).  Cut larger berries in half lengthwise, if necessary.  Spoon 1/2 of the remaining berry mixture over the berries, being careful to cover all of the fruit.  Repeat layers, ending with the strawberry mixture on top.  Refrigerator for two hours or until set

4. When ready to serve, in a small mixing bowl beat whipping cream and powdered sugar until stiff peaks form. Beat in almond extract and serve with pie.
