Marinated Tomato Salad Recipe

Happy 4th of July!!!  I was looking through my recipes and this one popped out at me, so I decided to post it for the 4th.  Its a delicious addition to any barbecue.  It can be made ahead and then taken to any gathering.  You don’t have to worry about mayonnaise spoiling with this salad since it is made with oil and vinegar.

What’s also great about this salad is you combine all different types of tomatoes.. its colorful and tasty!  You can top the salad with fresh herbs, but its not necessary.

Ingredients:

  • 1/2 cup tarragon or wine vinegar
  • 1/2 teaspoon salt
  • 1/4 cup finely chopped shallots (or 2 tablespoons onion)
  • 2 tablespoons finely chopped chives
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon pepper
  • 1/3 cup olive oil
  • 8 cups tomatoes – cut into chunks – use different varieties such as cherry, grape, yellow, plum, beefsteak, etc.

Directions:

1. Prepare marinade by combining vinegar and salt in large bowl, stir until salt is completely dissolved.

2. Add shallots or onions, chives, lemon juice and pepper, mix well.  Slowly whisk in oil until well blended.

3. Add in prepared tomatoes and toss well.  Cover and refrigerate for 2 to 3 hours.

makes 8 servings
