Its getting chilly here by me and I think I will make this recipe over the weekend.  If I had to make a list of my top 10 comfort foods, this would be on that list!

This is originally my mom’s recipe, so I have been having it for a long, long time!  Maybe I should just say a long time 😉  Anyway, it takes a while to cook, but it makes a lot so you will have leftovers.  Leftovers also freeze wonderfully so you can go that route with the extras too.

You can use a whole chicken if you’d like, but I usually just use chicken leg quarters and throw in a few breasts.  I know people who make the recipe with boneless chicken breasts, so that is an option but I prefer something with bones since they help to create a more flavorful broth.

Chicken & Dumplings

Ingredients:

  • 3 – 4 lbs. chicken
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 stalks celery, sliced (include leaves)
  • 1 bay leaf
  • 2 sprigs of fresh parsley
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons flour
  • 1/2 cup milk

For the dumplings:

  • 2 cups flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon snipped parsley or chives (optional)
  • 1/2 cup oil
  • 1 cup milk

Directions:

1. Place chicken, vegetables and seasonings into a large pot, cover chicken with water. Cover pot and bring to boil. Reduce heat and simmer for 1 1/2 to 2 hours or until chicken is fork tender. (Check throughout cooking and add more water if needed.)

2. Remove chicken from broth. Once cooled and able to handle, remove chicken from bones, in as large as pieces as possible. Set aside.

3. Remove fat and bay leaf from broth. In small bowl or measuring cup, blend flour and milk until smooth, gradually stir into broth. Simmer, stirring until smooth and thickened.

4. Prepare dumplings by mixing flour, baking powder, salt and parsley. Cut in shortening, blend until mixture is like a very coarse cornmeal. With fork lightly mix in milk to form soft dough (try to mix as little as possible).

5. Return chicken to broth and bring to a boil, turn heat to low. Drop dough by teaspoonfuls onto chicken pieces. Simmer dumplings 10 minutes uncovered; then cover and simmer 10 more minutes.
