Creamy Red Lentil Soup Recipe

A few years back, I wrote up a recipe for Red Lentil Soup, which happens to be one of my favorites.  It has a nice delicious lemony flavor.  Today, we have another red lentil soup, but this one is a little different.  This recipe does not have lemons, so the flavor is totally different.  Today’s recipe calls for coconut milk so this soup is on the creamier side.

Today, we have another red lentil soup, but this one is a little different. This recipe does not have lemons, so the flavor is totally different. Today’s recipe calls for coconut milk so this soup is on the creamier side.

Ingredients
  • 1 large onion diced
  • 1/2 red pepper diced
  • 1 carrot shredded
  • 2 garlic cloves minced
  • 2 tablespoons olive oil
  • 15 to 16 oz. red lentils rinsed
  • 8 cups chicken or vegetable broth
  • 13.5 ounce can of light coconut milk unsweetened
  • salt and pepper to taste
Instructions
  1. Sauté onion, garlic, red pepper and carrots in olive oil until soft.
  2. Add lentils and broth.
  3. Bring to boil.
  4. Cover, lower heat and let simmer for approximately 30 – 45 mins. or until lentils are soft.
  5. Add coconut milk and mix well.
  6. Serve and add salt and pepper to taste.
