Cheesy Chard Recipe

Do you ever find its close to impossible to get your family to eat greens?  I’ve had a tough time but this recipe that we have today, makes those greens disappear .. for kids and adults.  I’ve made this recipe for years and years.  Chard is such a healthy vegetable.  It comes in different color stalks and the leaves can vary slightly in color too.  I really can’t tell a difference in the taste of the different colors.

With today’s recipe, you will basically be making a cheese sauce for the chard and will then bake it.  I can eat it as a meal with some nice crusty Italian bread but the meat-lover I live with prefers it as a side dish.  🙂  Either way, its delicious.

Cheesy Chard Recipe

Ingredients:

  • 2 lbs. chard – wash and remove leaves from stalks
  • 1/2 teaspoon salt
  • 2 tablespoons butter or margarine
  • 2 tablespoons flour
  • 1/2 cup milk
  • 1/4 pound shredded cheddar cheese, divided

Directions:

1. Heat oven to 325°. Cut stalks from washed chard into 1 inch pieces. Cook stalks in salted boiling water for five minutes. Add torn leaves, cover and cook five additional minutes. Drain well and set aside.

2. Melt butter in saucepan, mix flour with milk and pour in with butter. Stir over medium heat until thickened. Add half of cheese and then toss with chard. Turn into baking dish. Sprinkle remaining cheese on top. Bake uncovered for 45 minutes.
