As I was clipping some coupons I had gotten from Women’s Day Magazine, I came across a coupon for Dannon yogurt. There on top of the coupon was what sounds like a delicious, quick and easy recipe for Creamy Sweet Potato Soup. I am always looking for good recipes using Sweet Potatoes because they are so good for you.
Here is the recipe:
Ingredients:
1 3/4 cup Plain Yogurt
2 tbsp Canola Oil
1 large Sweet Onion sliced
2 tsp ground cumin
3 Sweet Potatoes, peeled and cubed
1 1/2 qt chicken broth
2 tbsp chopped parsley or cilantro
1/4 cup toasted pumpkin seed (optional)
1 3/4 cup Plain Yogurt
2 tbsp Canola Oil
1 large Sweet Onion sliced
2 tsp ground cumin
3 Sweet Potatoes, peeled and cubed
1 1/2 qt chicken broth
2 tbsp chopped parsley or cilantro
1/4 cup toasted pumpkin seed (optional)
Directions:
1. In a soup pot heat oil Add onions and cumin and saute 3-4 min. Add potatoes and chicken broth and bring to a boil. Reduce heat and simmer soup 20 -25 min.
2. Puree soup with 1 1/2 cups plain yogurt and parsley or cilantro. Serve each protion of soupo with a dollop of remaining yogurt and a sprinkle of pumpkin seeds.
Makes 12 servings.
