Because the week never goes as planned, there are some repeats. We had 4 of the 7 items from last week. We didn’t order out so I think it was just leftovers and a change of menu. You know, I don’t even remember. That is pretty scary. Let’s put it this way. We did eat a home cooked dinner every night.
A word on my menu…we are not fancy cooks. The meals we make are fresh and made that night. The type of food we eat requires us to make it that night as we do not eat a lot of casserole type dishes that can easily be made and frozen. I do use the crock pot and would like to use it more often but the rest of my family is not in love with crock pot cooking.
I guess where I’m going with this is that if you plan ahead, you can whip up a nice meal in 30 minutes or less. All my meals do that. Even the Chicken Francaise. We don’t follow recipes step by step. We only use them as a guide or for ideas. So many times it’s fun to see what we have come up with. Most of our meals are made in a skillet, broiler or on the grill. I save the baking dishes for the weekend when there is more time.
So, here is our plan for this week.
- Tilapia, rice pilaf, veggies
- Breaded chicken, noodles, veggies
- Chicken Francaise, angel hair pasta, salad
- Turkey Soup (from the freezer)
- Breakfast for Dinner
- Homemade Pizza
- Eat out!
