Living Rich Recipe: Mini Banana Chocolate Chip Muffins

Ingredients

• 2 1/2 ripened bananas
• 2 1/2 cups flour
• 1 cup sugar
• 3 12 tsp baking powder
• 1 tsp salt
• 3 tbsp olive oil
• 3/4 cup milk
• 1 egg
• 1/2 cup mini chocolate chips

Directions

1. Preheat oven to 350 degrees
2. Spray muffin tins with cooking spray
3. In a large bowl add the bananas and mash until there are no big chunks
4. Add in all of the dry ingredients (flour, sugar, basking powder, and salt)
5. Stir until it is all mixed together
6. Add the wet ingredents and mix well (olive oil, milk, and egg)
7. Mix in the chocolate chips
8. Fill each tin with about a tablespoon of mixture each
9. Bake for 12-15 mins or until the centers are cooked through
10. When finished cool for 15 mins
11. You can even decorate them with melted chocolate like we did! Enjoy!
