  • Chicken legs – 2 lbs.

For the Marinade

  • Mango – 1
  • Olive oil – 2 tablespoons
  • White wine vinegar – 1 tablespoon
  • Lime – 1
  • Garlic – 2 cloves

For the Mango Salsa

  • Mango – 1
  • Jalapenos or serrano chiles – 1-2 (adjust according to spice level), minced
  • Scallions – 2-3
  • Cilantro – 1 tablespoon, minced
  • Lime – 1

The original recipe calls for Minute Rice, but we substituted regular brown rice for our shopping list.

  • Frozen corn – 1/2 cup
  • Milk – 3 tablespoons
  • Mayonnaise – 1/3 cup
  • Cooked chicken – 2 cups cubed
  • Tomato – 1/2 cup coarsely chopped
  • Scallions – 4 sliced (1/4 cup)
  • Lime wedges – optional

To give yourself less cooking time, you could substitute rotisserie chicken instead of cooking boneless chicken breast.
