Sauteed Kale

If you haven’t tried kale, you should. I am sure you will become a fan of this super food that is full of vitamins. You can eat it raw in a salad, roast it, saute, the list goes on. If you are like some of us here at LRWC, you will surely be hooked.

For today, I am going to share a side dish recipe for kale. Its my go-to recipe when I want to make kale. Its good, tasty and easy to make. Those are my favorite types of recipes to make, especially for weeknights when I don’t have a lot of time to spend in the kitchen.
This recipe is great by itself, but sometimes I like to add some olives, parmesan cheese or grated lemon rind. You can even put this on top of pasta and you have a meal! An optional ingredient is bread crumbs, I usually omit them but that is your call. Give this recipe a try whether you are a kale newbie or expert. I think you will like it!
Sauteed Kale
Ingredients:
- 1 – 2 lbs kale, washed, dried and shredded (remove leaves from stems)
- 1 medium onion, chopped
- 3 – 4 cloves garlic, minced
- 3 tablespoons olive oil
- 1 cup fresh bread crumbs (optional)
- salt and pepper to taste
Directions:
1. Heat oil in large frying pan. Add onions and garlic. Cook until soft.
2. If using, mix in bread crumbs, cook until light brown.
3. Stir in kale, cook for 2-3 mins until slightly wilted.
