Easy Shrimp Scampi Recipe

I have been making this Shrimp Scampi recipe for years and years.  I’ve made it for company and little do they know how simple and easy it is to make.  I didn’t tell them, so lets keep that a secret!

Cooking shrimp is easy, but the trick is not to over cook it.  Don’t use precooked shrimp for this recipe, it won’t taste as good.  Heat the oil, add in the garlic – as much as you want (I am being conservative with my ingredients list here) – let that cook for a short time, then add the shrimp.  Once the shrimp turns pink, it is done.  Your shrimp will be cooked before your pasta, its just that simple!

Ingredients
  • 1/4 cup olive oil
  • 4 cloves garlic minced – you can use more or less – I use a lot more
  • 1 lb. Raw Cleaned Shirmp
  • grated cheese to taste
  • parsley for garnish
  • salt & pepper to taste
  • Pasta 12 oz. – cooked separately
Instructions
  1. Cook pasta as directed. While pasta is cooking, heat oil in large skillet, add garlic. Let cook for 1 – 2 mins. Do not let garlic brown.
  2. Add shrimp. Cover pan. Let cook for 2 – 3 mins. Turn shrimp over in pan and cover.

  3. Remove from heat. Let shrimp sit for 5 mins. If the shrimp aren’t done, reheat until shrimp are pink.

  4. Toss with pasta, sprinkle with parsley and serve with grated cheese. If pasta seems dry add a little more olive oil.
