Date Nut Bread

A few years back Melinda shared her Banana Bread recipe.  In 2014, I posted my Cranberry Nut Bread recipe.  Today I am sharing a similar type of recipe for Date Nut Bread.  This recipe will produce two delicious loaves.

This is an old recipe but you can count on it turning out yummy.  I like making these “breads”.  They are always moist and tasty.. and maybe I feel less guilty eating “bread” than “cake”!  😉   This is actually my husband’s recipe and he is the one who always makes it!  Maybe that’s why it tastes so good to me!  😀

Date Nut Bread

Ingredients:

  • 1 cup dates, chopped
  • 2 teaspoons baking soda
  • 2 cups boiling water
  • 2 cups granulated sugar
  • 1 tablespoon butter
  • 2 eggs
  • 2 teaspoons vanilla
  • 4 cups of flour
  • 1 teaspoon salt
  • 1 cup chopped nuts – walnuts or pecans

Directions:

1. In a large bowl, add dates, sprinkle with baking soda and pour boiling water on top. Let cool.

2. Meanwhile, cream sugar, butter, eggs and vanilla.  Add flour and salt.  Mix well.  Blend in cooled date mixture (water included) and chopped nuts.

3. Grease two loaf pans and fill only half-full with batter.  Bake at 350° for 45 to 60 minutes.  Serve with butter if desired.
