Skillet Cornbread Recipe

I’ve been making cornbread for a long time.  I’ve always liked it BUT….  now that I am living in Ohio, I have learned the secret to making excellent cornbread!  I used to make cornbread in a glass baking dish, but now I use a cast iron skillet.  The skillet is the key. The edges of the cornbread are crispy with a buttery flavor.  Serve your cornbread hot and the butter will melt right off of it.

The skillet is a huge component when it comes to making great cornbread, but as you can guess, having the right combination of ingredients is right up there too!  😉  You might be surprised at all the cornbread recipes we’ve been trying the past few months! We’ve tried buttermilk recipes, recipes with sugar – no sugar, eggs – no eggs, mixes.. its ridiculous all we tried but it was a mission and our goal was to finally have a recipe that everyone liked!  We were pretty close to finding the perfect recipe when my sister-in-law, Kim gave me the final bit of advice… to use butter, not vegetable or canola oil but butter.   Whew, we did it, thankfully.  No more cornbread experiments here… maybe!!  😉

 

Skillet Cornbread Recipe

Ingredients:

  • 1 1/4 cups all purpose flour
  • 3/4 cup cornmeal
  • 2 teaspoons baking powder
  • 1/2 teaspoon of salt
  • 1 cup milk
  • 1/4 cup butter (1/2 stick), melted. Plus 1 – 2 tablespoons
  • 1 egg, beaten

 

Directions:

1. Preheat oven to 400°.  Once heated, place 9 – 10 inch cast iron skillet with 1 – 2 tablespoons butter in oven.  Let skillet heat up and butter melt (about 5 mins.).  Leave in oven until ready to pour batter.

2. Meanwhile combine flour, cornmeal, baking powder and salt. Stir in milk, butter and eggs.  Mix until dry ingredients are moistened. Do not over mix. The batter will be thick.

3.  Remove skillet from oven and carefully spoon in batter. Butter will be hot, so be careful. Return skillet to oven and bake 20 – 25 mins. until tester comes out clean when inserted in center.  Remove from skillet to serve on plate, or serve directly from skillet.  Serve with additional butter.
