Sticky Drumsticks Recipe

This recipe is easy to prepare and yummy to eat!  It seems to be a favorite with kids and makes nice leftovers for lunch the next day.  It lives up to its name; it is a bit sticky but the chicken is worth it!  Although this recipe calls for drumsticks, I would say that thighs would work just as well.  You would have to adjust the cooking time slightly but they would be fine to use.

Ingredients
  • 1/2 cup apricot preserves
  • 1/4 cup teriyaki sauce lower sodium works fine
  • 1 tablespoon brown sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon apple cider vinegar
  • 12 medium drumsticks about 3 pounds - remove skin
Instructions
  1. Preheat oven to 425°. In large bowl whisk apricot preserves, teriyaki sauce, brown sugar, cornstarch, vinegar until blended. Add chicken drumsticks, turn to coat.
  2. Spoon chicken and sauce into baking dish. Bake for 15 mins. Remove chicken from oven and brush chicken with sauce in pan. Cook chicken for 15 to 20 minutes longer, basting with sauce every five minutes.
  3. Remove chicken from oven when done and brush with sauce. Let cool in pan for 10 minutes before serving. Serve with sauce.
