Chicken Cacciatore Recipe

I look at a lot of recipes each week when I write up our meal planning posts here on LRWC.  Some of the recipes really make me drool.  I call it an occupational hazard 😉  One of the posted recipes was for Chicken Cacciatore made in a crock pot.  It was one of those recipes where the photos alone make a person hungry.  I told myself I would make it, but then remembered that I had my own recipe for Chicken Cacciatore so I made that instead.  I’m glad I did.  It was delicious.  Its not made in a crock pot, but its not difficult to make.

The recipe calls for about 2 – 3 pounds of chicken.  You can use a whole chicken if you want to cut it up, boneless chicken, legs, thighs or any combination.  I used thighs and it was good.  Brown the chicken first, then add onions, peppers, garlic, tomatoes and spices.  You can also add mushrooms if  you like.  Let it simmer and in 45 minutes, its done.  Serve with pasta topped with grated cheese and a tossed salad.  Thankfully I have some leftovers and I will have them for lunch!!  🙂

Chicken Cacciatore

Ingredients:

  • 4 tablespoons oil
  • 1/2 cup flour (approximately)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 1/2 – 3 pounds chicken – remove skin
  • 1 cup chopped onion
  • 3/4 cup chopped bell pepper (any color)
  • 4 garlic cloves, minced
  • diced tomatoes – 28 oz. can
  • tomato sauce – 8 oz. can
  • 2 bay leaves
  • 1/2 teaspoon dried oregano
  • salt-and-pepper to taste

Directions:

1. Mix flour, salt and pepper in large plastic baggie.  Place 1 – 2 pieces of chicken in bag; shake to coat chicken with flour.  Continue until all are covered with flour.

2. In large skillet heat oil and sauté chicken until golden on all sides. Add onions, pepper and garlic. Brown slightly. Add tomatoes, tomato sauce, bay leaves leaves and oregano. Simmer uncovered 30 to 40 minutes or until chicken is fork tender.
