Creamy Beet Soup Recipe

Healthy Hint: When you buy fresh beets from the store, don’t toss the greens, cook them in a little water then drizzle with olive oil. Besides being healthy beet greens are tasty!

- 1 lb raw beets peeled and chopped
- 1 onion chopped
- 2 celery stalks chopped
- 1/2 red bell pepper seeded and chopped
- 1 large apple chopped
- 2 tablespoons olive oil
- 8 cups chicken or vegetable broth
- 1/4 teaspoon cumin
- 1 bay leaf
- 1 fresh lemon juiced
- salt and pepper to taste
- 1/2 cup sour cream for garnish
- fresh herbs for garnish
Place prepared vegetables and apple in large pot with oil and 1/4 cup water. Cover and cook for about 15 minutes.
Add broth, cumin, bay leaf and lemon juice. Bring soup to boil then cover and turn down heat to simmer; cook for about 30 minutes until all vegetables are tender.
Let soup cool slightly then purée in blender or food processor until smooth and creamy. When ready to serve, divide the soup between bowls and garnish with swirls of sour cream.
