What’s for dinner tonight? As if us busy moms don’t already have enough on our plates, the risk of trying a new dinner recipes can come with backlash. Are you like me and worry it won’t turn out how I expected or will my sometimes picky eaters (ages 1, 4 and 5) not be satisfied?

Despite my doubts, thanks to Sam’s Club and Unilever, I’ve been inspired to mix it up for the next few weeks. I want to try new flavorful recipes with premium Unilever brands, and I’m challenging you to dig deep for this inspiration too! Come on, you can do it! 😉

I’m usually busy running errands and carting the kids around town, so I love that at Sam’s Club, I can order my groceries online and have everything waiting for me when I arrive!  I don’t even have to get the baby out of the car! Check out this awesome looking Cod Veracruz recipe. Talk about mixing it up! What I love most about this recipe is it’s something DIFFERENT. I’m so tired of the same boring chicken dishes I usually make. This dish looks so flavorful and uses fresh, wholesome ingredients. I was so intrigued with it, so I gave it a try!

Ingredients:

  • 2 Tbsp. vegetable oil
  • 4 pieces cod fillet, (about 1-1/2 lbs.)
  • 1 medium onion, chopped
  • 1 clove garlic
  • 1 can (14.5 oz.) whole peeled tomatoes, undrained
  • 1/2 cup pimiento stuffed olives, halved
  • 2 Tbsp. Knorr ® Reduced Sodium Chicken flavor Bouillon
  • 1 Tbsp. lime juice
  • 2 Tbsp. chopped fresh cilantro

Directions:

  1. Heat 1 tablespoon oil in a large, deep nonstick skillet over medium-high heat.
  2. Cook cod about 4 minutes until golden, turning once. Remove and set aside.
  3. Heat remaining 1 tablespoon oil over medium heat and cook onion about 4
    minutes or until tender, stirring occasionally. Add garlic and cook about 30
    seconds. Add tomatoes, breaking up with a spoon. Stir in olives and Knorr ®
    Reduced Sodium Chicken flavor Bouillon.
  4. Return cod to skillet and bring to a boil. Reduce heat and simmer covered
    about 4 minutes or until fish flakes with a fork. Stir in lime juice.
  5. Garnish with cilantro and serve with hot cooked rice.

Yum! We enjoyed this dinner with a refreshing glass of Lipton Honey Melon Cucumber Iced Tea. While my kiddos aren’t into fish, my husband and I really enjoyed this recipe. I feel inspired to continue mixing it up in the kitchen.
