Easy Chicken Stir Fry with Peanut Sauce Recipe

This recipe is one that comes together quickly and its a nice change from the norm.  You can use broccoli and red pepper, which is listed in the recipe or substitute other stir fry veggies.  You can serve over rice noodles, regular noodles or a pasta, whatever you might have on hand.  Enjoy!

Easy Chicken Stir Fry with Peanut Sauce

Ingredients
  • 1 lb chicken breast, cut into thin strips
  • 2 tbsp olive oil
  • 1 garlic clove, chopped
  • 1 onion, chopped
  • 1 red pepper, sliced
  • 10-12 oz. Frozen Broccoli or (1 1/2 cups fresh)
  • 1 lb noodles or pasta, cook as directed
Sauce
Instructions
  1. Heat oil in large skillet, add chicken; remove from pan once cooked. Add garlic and onion to pan; cook until onion is softened.

  2. Add broccoli and red pepper. Saute for 2-3 mins.

  3. Whisk sauce ingredients together; pour over vegetables. Cook for 3-4 mins or until sauce slightly thickens and broccoli is tender. Add cooked chicken, mix well. Serve over noodles or pasta. Serve with additional soy sauce and salt and pepper to taste.

Options:
  1. If you like your stir fry on the spicy side, add some cayenne pepper.

  2. You can substitute or add other vegetables to the pan while cooking the broccoli.
