Apple Walnut Salad Recipe | Dressing Recipe Included

Here’s a different take on a salad. Its very similar to a Waldorf Salad, which we posted a few years back. The main difference between the two is the dressing and this recipe calls for Blue Cheese or Gorgonzola. Enjoy!

Apple Walnut Salad

Ingredients
Dressing
  • 1/3 cup olive oil
  • 1/3 cup vinegar (more or less to taste)
  • 2 tbsp sugar
  • 2 tbsp chopped chives or scallions
  • 1 tsp dry mustard
Salad
  • 2 apples cut into bite-sized pieces
  • 1 tbsp lemon juice
  • 6-8 cups mixed salad greens
  • 4 oz crumbled blue cheese or gorgonzola cheese
  • 1 cup walnut halves
  • salt and pepper to taste
Instructions
  1. Whisk dressing ingredients. Set aside.

  2. In small bowl, toss apples with lemon juice. In large bowl, toss lettuce, apples, cheese and walnuts. Pour dressing over salad, toss and mix well.
