Arugula Watermelon Salad with Feta Cheese
Ingredients
- 2 tbsp white wine vinegar
- 2 tbsp olive oil
- 9 oz arugula (thick stems removed)
- 1/4 cup red onion, chopped
- 4 cups seedless watermelon cubed
- 4 oz feta cheese, crumbled
- pine nuts or walnuts for topping
Instructions

Combine vinegar and olive oil, blend well. In large bowl combine arugula and red onion; then pour dressing on top and mix well. Toss in watermelon and feta cheese stir until just mixed. Top with pine nuts or walnuts.
