Here's a great "make ahead" breakfast recipe.  This strata tastes best when you make it the day before and bake it in the morning for a special breakfast.  Or it happens to make a good dinner too!!  Enjoy!

Ingredients
  • 8 slices of bread (day old works great)
  • 8 cooked bacon slices, crumbled
  • 1 cup shredded cheddar cheese
  • 1 14.5 oz can diced tomatoes, thoroughly drained
  • 3 eggs
  • 1 1/2 cups milk
  • 1/8 tsp black pepper
Instructions
  1. Spray shallow 2 quart backing dish with cooking spray. Arrange 1/2 bread in single layer in dish. Cover with half of the bacon, cheese and tomatoes. Repeat second layer. In small bowl, combine eggs, milk and black pepper. Pour over casserole. Cover and refrigerate overnight.

  2. When ready to bake, preheat oven to 400° and bake casserole for 35 to 40 mins. until casserole is firm and lightly browned.
