Cilantro Lime Rice Made with Cauliflower

Cilantro Lime Rice Made with Cauliflower

First, chop 1  bunch of cilantro. Add more if you like. You’re the boss, applesauce.

Heat oil in large skillet over medium heat. Saute cauliflower rice with cilantro for 4-5 minutes. Add in lime juice, tossing to incorporate and then cook for an additional 3-4 minutes.

I get my cauliflower rice at Costco or Aldi. And, although prepared foods are on my list of Things Not to Buy at the Grocery Store so that you can reduce your grocery bill, the price of the Cauliflower Rice at these stores is comparable to buying a whole head of cauliflower. And, hey, all the work is done for you already, so win win!
