Couscous Salad Recipe

 

Here’s a side dish recipe that is a little different. This couscous salad calls for corn, peas and onion but you can add your own favorite vegetables to it if you’d like. I like peppers or tomatoes sometimes! Enjoy!

Couscous Salad

Ingredients
  • 1 10 oz. package Couscous
  • 1 14.5 oz. can chicken or vegetable broth
  • 1 cup frozen peas, thawed
  • 1 cup corn, fresh or thawed frozen
  • 1/4 cup onion, chopped
  • 3 tbsp olive oil
  • 1 teasp grated lemon rind
  • salt & pepper to taste
Instructions
  1. Prepare couscous according to package directions but use broth plus extra water to equal the amount of liquid required. (Do not add any butter or salt.)

  2. In large bowl, mix peas, corn, onion, olive oil and lemon rind.

  3. Stir couscous into vegetable mixture. Cover and refridgerate for at least 1 hour before serving.
