
I don’t think this recipe could get much easier. Its done in the microwave. You can substitute the peanuts with other nuts such as pecans, macadamia, walnuts or a mix of all. Enjoy!

- 1/2 lb skinned peanuts
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1 tbsp butter
- 1 tsp vanilla extract
- 1 tsp baking soda
- cooking spray

Place peanuts, sugar and corn syrup in microwavable bowl. Cook for 5 - 6 mins on high until mixture bubbles and peanuts are browned. Stir in butter and vanilla. Cook 2 mins. Add baking soda, stir quickly until foamy. Pour mixture into greased baking sheet. Cool for 15 mins then break and store in airtight container.
