Eggplant Dip Appetizer Recipe | Crock Pot Recipe!

If you’re an eggplant fan, you will love this Eggplant Dip. Great for an appetizer for the holidays or anytime! A few years back, we posted a recipe for Baba Ganoush, which is similar since it also has eggplant as an ingredient. But what is easy about this recipe, is that its made in a crock pot! Fix up the recipe and serve with pita, crackers or veggies for dipping. Enjoy!

Ingredients
  • 1 eggplant, about 1 1/2 - 2 lbs, peeled
  • 1/2 cup chopped fresh tomatoes
  • 1/4 cup plain Greek yogurt
  • 2 tbsp chopped onion
  • 2-3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1/2 tsp dried oregano
  • 1-2 tbsp fresh lemon juice
  • salt and pepper to taste
Instructions
  1. Pierce peeled eggplant and place in crock pot. Cook until tender, about 4 hours. Mash eggplant and then mix with remaining ingredients. Season to taste with lemon juice, salt and pepper. Serve with pita bread, vegetables or chips.
