This is a delicious recipe for fresh strawberries! Just looking at the pie will make your mouth water. You make a simple crust, then a filling that is cream cheese based. Put all the strawberries on top, then add a glaze. Enjoy!
- 1 cup sugar
- 2 tbsp cornstarch
- 3/4 cup fruit juice or water
- 1 tsp lemon juice
Preheat oven to 375°.
Cut butter into flour and sugar. Add egg yolk and salt, mix with fork until well blended. Press crust into a 9" pie plate. Bake for 15 mins or until golden. Remove from oven and let crust cool.
Combine cream cheese, sugar, eggs and vanilla. Beat until smooth. Pour into cooled pie crust. Bake 15 - 20 mins until set. Remove from oven and let cool.
Once pie has cooled, stand strawberries in pie shell. Spoon glaze over berries. Chill in refrigerator. Serve and enjoy!
Combine all glaze ingredients and blend well in small saucepan. Simmer, stirring constantly until the glaze thickens.
