Lemon Meringue Pie Recipe

For some reason, the thought of making a Lemon Meringue Pie was intimidating for me.  So a few weeks ago, I decided to bite the bullet and try to make one.  First of all, it was a lot easier than I had thought and second, it was delicious!!  I’m ready to make another one!  Enjoy!

Lemon Meringue Pie

Ingredients
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1/8 teasp salt
  • 1 1/4 cups warm water
  • 1/4 cup lemon juice
  • grated rind of 1 lemon
  • 3 egg yolks, slightly beaten
  • 1 tbsp butter or margarine
  • baked 8 or 9" pie shell
Meringue
Instructions
  1. Combine sugar, cornstarch and salt in pot. Stir in water, lemon rind, juice, egg yolks butter. Cook, stirring constantly, scraping sides of pot until mixtrure is thick. Remove from heat and cool.

  2. Once cooled, heat oven to 350°. Spoon lemon filling into cooled pie shell. Top with meringue. Bake 12-15 mins.

Meringue
  1. Place egg whites, salt and vanilla in mixing bowl. With mixer beat at high speed until frothy. Gradually add sugar. Continue beating until stiff peaks are formed. With a spoon, spread over lemon filling making sure to spread all the way to the crust.
