I like to make several types of recipes over the holidays. Everyone seems to enjoy a variety, although some are always favorites. Over the years we have posted a lot of holiday cookie recipes. Today we have one for Lemon Squares. Enjoy!

Yummy Lemony Cookies
- 1 cup flour
- 1/4 cup powdered sugar
- 1/2 cup butter or margarine
- 2 eggs, beaten
- 1 cup sugar
- 1/2 tsp grated lemon rind
- 3 tbsp fresh lemon juice
- 2 tbsp flour
- 1/2 tsp baking powder
- 2 tbsp powdered sugar

Combine 1 cup flour and 1/4 cup powdered sugar, mix in butter until mixture looks like coarse crumbs. Press evenly into a 9 inch square baking dish. Bake at 350° for 15 mins.

Combine eggs, 1 cup sugar, lemon rind and juice and beat well. Combine 2 tbsp flour and baking powder. Add to egg mixture, mix well. Pour over baked crust. Bake at 350° for 20 mins until slighly browned and set. Sprinkle 2 tbsp of powdered sugar. Let cool and cut into 1 1/2 inch squares or desired size squares.
