In the warmer weather, I still enjoy pasta for dinner but don’t always feel like having a tomato based sauce. This recipe is lighter, has lemon and ground nuts. Enjoy!
- 1 lb pasta such as ziti, penne or farfalle
- 1/4 cup butter
- 1 tbsp grated lemon rind
- 2 tbsp brandy or cognac
- 3/4 cup walnuts, hazelnuts or pinenuts, finely ground.
Cook pasta according to package directions.
In small saucepan, melt butter. Add remaining ingredients and cook until throughly heated. Pour sauce over drained pasta and serve.
