This bread recipe takes a little time to prepare since it is a yeast recipe, but it is worth the wait while the dough rises. You can add raisins to the bread if you’d like, definitely not necessary, but it is an option. Enjoy!
-
Combine milk, pumpkin, shortening, sugar, salt and spices.
-
Sprinkle yeast on warm water; stir to dissolve.
-
Add 3 cups of flour, milk mixture and eggs to the yeast. Beat with mixer at a medium speed for 2 minutes, scraping bowl if needed. Stir in raisins, if using. By hand, mix in remaining flour a little at a time.
-
Turn dough onto a floured surface and knead until smooth and elastic. Place dough in lightly greased bowl, turn over so dough is greased on top. Cover and let rise in a warm place until doubled - about 1 to 2 hours. Punch dough down, turn on to floured surface and divide in half. Round each piece into a ball then shape into loaves. Place into 2 greased 9x5x3" loaf pans. Brush top of loaves with melted butter. Cover and let rise until doubled - about 1 hour.
-
Bake in 375° oven for 35 minutes or until bread is done with a brown crust.
