Spinach and Parmesan Pasta Recipe | Pesto without the Basil

Here’s a tasty recipe that is very quick to make. You’ll have the sauce done by the time the water boils for your pasta! You can use any of your favorite pastas for this recipe; which you cook according to the package directions. The sauce is very similar in texture to a pesto sauce, but it has no basil so you will have the flavors of the parsley, garlic, onion, spinach and oregano shine through. Ingredients
  • 1 lb pasta
  • 2 cups baby spinach leaves, packed
  • 1 cup fresh chopped parsley
  • 1/4 cup parmesan cheese
  • 1/4 cup onion, chopped
  • 1/4 cup chopped walnuts
  • 2 garlic cloves, minced (or more)
  • 2 tbsp olive oil
  • 1 tbsp dried oregano
  • salt and pepper to taste
Instructions
  1. Prepare pasta according to package directions. Put the rest of the ingredients into a blender or food processer; blend until smooth. Toss with hot pasta and serve.
