Easy Stuffed Shells Recipe | Spinach, Ricotta & Mozzarella

Stuffed Shells looks fancy – but it is so easy to make and a lot of times you have most of the ingredients in your house (expect maybe the shells!) This is a great meal to make for guests as well as freeze and bake later!

I added spinach and onion in mine. You can completely omit this if you won’t want it. You can really add anything you want!

Easy Stuffed Shells Recipe with spinach and onion. You can leave out the spinach and onion or add something different in like chicken!

Ingredients
  • 18-20 Pasta Jumbo Shells How many you need depends on the size of the shells.
  • 1 Diced Onion
  • 4-5 Cups Chopped Spinach I like using fresh spinach
  • 1 Tbls Olive Oil
  • 2-4 Cloves minced Garlic
  • 1 Cup Ricotta Cheese
  • 1 Cup Shredded Mozzarella Cheese
  • 1/2 Cup Grated Parmesan Cheese
  • 1 Egg
  • 2 Cups Red Sauce
  • Salt & Pepper to Taste
Instructions
  1. Preheat the Oven to 375

  2. Cook the Pasta Shells according to the package directions - it will tell you how to cook them if you are baking them

  3. In a pan add Olive Oil, and Onion and cook before it turns brown, then add in garlic and spinach untill slightly wilted.

  4. In a Bowl add in Ricotta, Parmesan, Egg, Mozzarella, salt and pepper and the spinach mixture.

  5. In a baking dish that will fit the amount of shells you want to use - cover the bottom with red sauce. you shouldn't be able to see the bottom - about 1 cup or so (depends on your pan).

  6. Add the mixture into the shells and place in baking sheet and top with the remaining sauce

  7. Bake in the oven until warmed through (approx 20 min) - be careful not to let the shells get hard.
