Turkey Soup with Dumplings Recipe

Turkey Soup with Dumplings

Ingredients
  • turkey carcass with some meat left on it
  • 8 cups water
  • 16 oz can chopped tomatoes
  • 2 celery stalks, sliced
  • 2 carrots, sliced
  • 1 medium onion, chopped
  • 1/4 cup snipped parsley
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 bay leaf
Dumplings
  • 1/2 cup water
  • 1/4 cup butter, melted
  • 1/2 cup flour
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 2 eggs
  • 1 tbsp snipped parsley
Instructions
  1. Cut up turkey so that it fits in a large pot. Combine all soup ingredients in large pot, bring to a boil then cover and let simmer for 2-3 hours. Let soup cool, remove carcass. Take meat off the bones and put the meat back into the pot. Discard bones and bay leaf. Reheat soup. Once its bubbling, drop dumplings from a tablespoon on top of hot soup. Cover and let simmer for 20-30 mins.

Dumplings
  1. Combine water, butter, flour, baking powder and salt. Mix well. Add eggs one at a time, mixing after each egg until mixture is smooth. Stir in parsley.
