This recipe proves that not every delicious meal has to be complicated to prepare! All ingredients go right in to the crock pot for this dish. You can serve this dish with pasta, rice or polenta. Enjoy!
- 1 lb boneless chicken breast, cut into 1 inch chunks
- 14.5 oz. can chunky Italian seasoned tomatoes (chopped or crushed)
- 1 cup sliced onion
- 1 cup slice red or green pepper
- 2 garlic cloves, minced
- salt and pepper to taste
Combine all ingredients in crock pot. Cover and cook on high for 4-5 hours or on low for 8 hours. Serve with pasta, rice or polenta and parmesian cheese for topping.
