Vegetarian Potato Leek Soup Recipe | Delicious and Easy!

This is a vegetarian recipe, but you can easily make it a vegan recipe simply by using soy milk instead of regular milk. You could also substitute the vegetable for chicken broth, so you can change this recipe up a bit and it will be delicious and healthy! Enjoy!

Potato Leek Soup Recipe

This is a vegetarian recipe, but you can easily make it a vegan recipe simply by using soy milk instead of regular milk.  You could also substitute the vegetable for chicken broth, so you can change this recipe up a bit and it will be delicious and healthy!  Enjoy!

Ingredients
  • 2 tbs olive oil
  • 3 cups leeks, washed and chopped (white and green part included)
  • 1/2 cup onion, chopped
  • 6 cups cubed potatoes
  • 1 carrot, diced or shredded
  • 1 celery stalk, sliced
  • 7 cups vegetable broth or water
  • salt and pepper to taste
  • 1 cup milk (regular or soy)
Instructions
  1. Heat oil in pot, add leeks and onions. Cook until softened, about 5 mins.

  2. Add potatoes, carrot, celery and broth. Bring to boil then reduce heat and let simmer for 45 mins.

  3. Taste for salt and pepper. Let soup cool slightly and add milk.

  4. Optional: puree soup or a portion of the soup in blender or food processor.
