Pumpkin Bars

Here’s a bar cookie recipe! This recipe is simple to make. You combine the coconut, graham cracker and nuts. Press most of the mixture into your pan, then pour the prepared pumpkin mixture over that, sprinkle the rest of the coconut, graham and nuts on top. Bake it and its done!

  1. Preheat oven to 375°. Combine coconut, graham cracker crumbs, nuts and butter. Press 2/3's of mixture into ungreased 13 x 9 baking pan.
  2. Combine pumpkin, milk, eggs, cinnamon, vanilla and salt; mix well. Spoon over coconut mixture. Sprinkle remaining coconut mixture on top.
  3. Bake for 30 to 35 minutes. Cool in pan and chill thoroughly. Cut into 3 x 2" bars.
