Prime Rib Recipe

Ingredients

  • Prime Rib Roast Buy 1 Rib for every 2 people
  • Kosher Salt
  • Ground Pepper coarsely ground

Gravy

  • Shallots chopped
  • Splash of Red Wine
  • Beef broth enough to increase the amount of your pan drippings
  • 1 pat butter

Instructions

  1. Remove bones from the rib & tie back on place. Note that a butcher can do this for you at no extra cost. 

  2. Let the roast sit out for about 3 hours to come to room temperature
  3. Preheat oven to 500°
  4. Heavily season meat with kosher salt & pepper
  5. Place in pan with fat side up (bones will be resting at the bottom of the pan)
  6. Cook for 15 minutes at 500°
  7. Reduce oven temperature to 325° and cook 12 minutes per lb until the internal temperature of the meat reaches 120° - 125°. If it's cooking too quickly, reduce oven to 200°
  8. Let rest for about 30 minutes. At this point the internal temperature will raise to about 130° - 135° which will give you medium rare to medium meat. Remember the middle will be more medium rare and the ends will become more medium so you'll have a variety for your guests to choose from.
  9. For the gravy, take the pan drippings and add minced shallots, red wine, more beef stock and a pat of butter. To make it thicker, whisk in 2 tbsp of flour.
