Arugula Watermelon Salad with Feta Cheese

Ingredients

  • 2 tbsp white wine vinegar
  • 2 tbsp olive oil
  • 9 oz arugula (thick stems removed)
  • 1/4 cup red onion, chopped
  • 4 cups seedless watermelon cubed
  • 4 oz feta cheese, crumbled
  • pine nuts or walnuts for topping

Instructions

  1. Combine vinegar and olive oil, blend well. In large bowl combine arugula and red onion; then pour dressing on top and mix well. Toss in watermelon and feta cheese stir until just mixed. Top with pine nuts or walnuts.
